Cooking Instructions:Thaw completely before cooking. Pat with paper towel until completely dry and poke holes all across the skin of the pork.
Oven: Preheat oven to 500°F. Place skin side up on a wire rack on a tray in center of oven. Cook for two and a half hours. Turn over so skin side is down and cook for additional hour or until meat reaches internal temp of 165°F. Turn again so skin side is up. Increase temp to 450°F and cook approx 20 mins or until skin has crisped. (Option: Use Air Fryer at 360°F). Remove from oven and let rest for 15-30 minutes before removing twins and slicing. For best results, use meat thermometer.
Air Fryer:Preheat air fryer to 360°F. Place Skin side up and cook for 1 hour. Turn over so skin side is down and cook for 1 hour or until meat reaches internal temp of 165°F. Turn again so skin side is up and increase temperature to 425°F. Cook for approx 5 minutes per side (rotating quarter turns) until all skin has crisped. Remove and let rest for 15-30minutes before removing the twins and slicing.
