Whisk together 1 egg and 100ml of milk in a large bowl. Add 150g of buttermilk pancake mix and stir until combined and lump-free. Heat one tablespoon of oil in a pan over medium heat. When hot, pour in 1/4 of the pancake batter. When bubbles appear and remain on the surface, flip the pancake. Repeat until all pancake batter is used up.
